Spare ribs (cut into 1 ½ inch length) – 800g
Baking soda – 1 ½ tsp
White vinegar – 2 tbsp
Maltose – 2 tbsp
Hot water – 1.5 litre
Sugar (for caramel use) – 2 tbsp
Red chili (coarsely chopped) – 1
Crushed black peppercorn – 1 tsp

Spare ribs Marinade
Coca cola – 1 can
Rock sugar granules – 1 tbsp
Dancing Chef Meat Marinade Sauce – 1 packet

1. Rinse the spare ribs and cut into 1 ½ inches length. Season with baking soda for about 1 1/2 hours. Wash and rinse thoroughly afterwards.
2. Add 2 tablespoons white vinegar and 2 tablespoons of maltose into 1.5 liter hot water. Bring it to the boil then blanch spare ribs in boiling maltose and vinegar stock for about 10 minutes. Cover simmer without fire for another 10-15 minutes. Drain thoroughly before marinating with the spare ribs marinade
3. Add in spare ribs marinade and mix well. Set aside to marinate for about 1 hour.
4. Heat wok and add in 2 tablespoons of sugar to caramel, seal marinated spare ribs thoroughly, and then add in coca cola marinade sauce.
5. Bring the sauce to boil until it reduces till semi-dry. Add in chopped chili and black peppercorn just before further drying. Stir-fry briefly until well combined. Serve hot.

1. 排骨洗净后切成 1 ½英寸长。用小苏打腌约 1 ½小时之后,冲洗干净。
2. 将白醋和麦芽糖各2汤匙加到 1.5公升的热水中煮。水滚后,川烫排骨约 10分钟。 熄火盖上再煨10-15分钟。用腌肉酱料腌制前先彻底去水。
3. 倒入腌肉酱料拌均。腌大约 1小时。
4. 热锅后放2汤匙糖煮至焦糖化,将排骨放入并用酱汁把排骨完全包裹住,倒进可口可乐腌料。
5. 把酱汁煮滚收汁至半干。加入切好的辣椒和黑胡椒翻炒拌均。趁热上盘。
